			<content:encoded><![CDATA[<p>Once upon a time, the <strong>Hudson River</strong> was so packed with <em>wild sturgeon</em> that some of the pubs in <strong>New York City</strong> would purposefully give away the now popular roe on bread to keep their customers sitting and drinking away. Of course, now you won&#8217;t find that anymore, but since then, we have found the eggs highly desired. Even though the fish are making a return to the polluted waters, its good to know that the <a href="http://www.mote.org/"><strong>Mote Marine Laboratory</strong></a> in <em>Sarasota, Florida</em> has been able to produce sustainably farmed <em>Siberian sturgeon caviar</em> since <em>2006</em>.</p>

<p>The caviar made at Mote&#8217;s sell for <em>between $1,584 and $4,200 per kilo at market</em> and they were able to harvest 1.5 metric tons last year. That&#8217;s pure gold right there, almost literally. And how good is the actual product for something that is raised in a lab? Let&#8217;s just say the top restaurants are using them. So there. Fuck, I want some caviar now.</p>
